Beautiful weather - a chance to get some fresh air - take some photographs - bake a cake

Share your day

While we are in the middle of this good weather we have an opportunity to get outside for some fresh air, a little exercise. Relax, view nature in spring time, take some photographs, enjoy a cuppa, maybe talk to a friend. Enjoy a diversion from the everyday world for a few minutes or for an hour.

I hope you will post a few pictures here to share the mood with whoever comes this way.

Today has been a working day for me so very little opportunity to enjoy the sun. I am typing this from my garden bench though having only my 2nd cuppa of the day after finishing work for today. Here’s a pic of my view

Not even a crumb and unfortunately what there was didn’t last long at all.

I made sure of that.

(You must understand - I’m not to be trusted near items of that type.)

I have a picture here for Miracle Cake, shown below.
So called because it disappears so fast that it is a miracle if you ever get to see any.
Preferably served two slices at a time with a beverage of your choice.

but what use is a picture without a recipe:

Ingredients

225g (1 cup) unsalted butter
225g (1 cup) soft brown sugar
225g (1½ cups) mixed dried fruit (raisins, currants, sultanas)
Zest + juice of 1 orange
1 tsp ground cinnamon
1 tsp mixed s p i c e (or ½ tsp each nutmeg + a l l s p i c e)
2 large eggs, beaten
225g (1¾ cups) self-raising flour (or plain flour + 2 tsp baking powder)
2–3 tbsp brandy/rum/sherry (optional, but recommended!)

Instructions

  1. Prep:
    Preheat oven to 160°C (140°C fan)/325°F/gas 3. Line a 900g (2 lb) loaf tin with parchment.
  2. Boil the Fruit:
    Melt butter in a saucepan. Add sugar, dried fruit, orange zest/juice, and s p i c e s.
    Simmer 5 mins, stirring. Let cool 10 mins.
  3. Make the Batter:
    Stir eggs into the cooled fruit mix.
    Fold in flour gently. Add alcohol if using.
  4. Bake:
    Pour into the tin. Bake 1½–1¾ hours (cover with foil if browning too fast).
    Test with a skewer—it should come out clean.
  5. Store & Serve:
    Cool in tin 10 mins, then transfer to a rack.

Optional: Wrap and store 1–2 days for a richer flavour.
Brush with extra alcohol weekly.

Pro Tips

Darker flavour? Use dark brown sugar or treacle.
Hilary suggests chucking in some chopped glace cherries.

Be extra careful with this, store it away in a darkened corner.
It has a habit of completely disappearing with no trace remaining.

I suppose I should really hate you for all the good scrummy recipes you post . . . but I can’t 'cause that one look delicious. But it would last a little longer in my house because the kids aren’t into dead flies in their cake :rofl:

I suppose you could look at it as a good healthy helping of your ‘five-a-day’ plus there is no salt in there.
No chemicals no artificial additives just good nourishing food bursting with fruitiness.

Don’t you just hate it when cake just disappears. We have the same problem in our house :rofl::rofl:

That fruit cake looks delicious. I might have to borrow the recipe as hubby loves a fruit cake.

I can recommend that chocolate cake. I got Mr Morrisons to make it for Bob’s birthday tea and coz I was the cutter of it I made it last, he would have eaten it in one sitting. There would have been a fire in our house if I had put candles on it, so I didn’t bother.

We have a little apple tree, well 2 actually which my daughter grew from seeds. They sit in pots in the garden and every year they both blossom…a little, and we get just 1 apple of the same tree each year. Actually I think we got 2 once or twice but only ever survives for eating, usually in late October :blush: But our garden is not really big enough to plant them out proper.

Awww that sounds sweet :smiling_face_with_three_hearts::smiling_face_with_three_hearts: We have a couple of eating apple trees but mainly cooking apples. We become very popular come apple picking time. We share them around our family & friends. Last year they didn’t do well but we hope for better this year. I bet your apple is very treasured & highly fought after :blush::blush:

@HHilary the chocolate cake looks very yummy. I don’t blame Bobbi for wanting it all in 1 go although I hope he’d leave you a little slice😁

We are very lucky with our garden. My hubby is the gardener not me. I don’t mind sitting in it though :blush:

@Mrs5K That is why I keep the key so I get some cake.
We have a baking apple tree, it’s usually falling over with the weight of apples but last year they appeared but didn’t grow, so no apple crumble. We also have a pear tree, that started out as a seed but after years of not producing anything I told it if it didn’t give me pears the next year it was being cut down. Guess what we got loads that year and every year after that.

Thank you!!! I think I will make this when the weather turns this weekend. I am in Montana where we are in the Spring of Deception where we have rain and snow one day and then 75 F the next…repeat, repeat, etc. :joy:
