Enjoying life -- a little indulgence is good for morale

Scones are the first thing I made on getting back in the kitchen after stroke.
Because stroke, five years ago, left me right side disabled I use a stand mixer to help me out.
I just throw all the ingredients in the bowl together and mix on slow until the dough comes together.

A recently made batch were delicious and I want to make more today.

Here’s the recipe for anyone tempted to have a go:

Fruit Scones Recipe

Ingredients

makes 8 (6 large)

45g Sugar
40g Margarine

250g Plain White Flour
2 tsp Baking powder
100g Sultanas

1 Egg (medium)
75ml Milk

Method

Step 1
Preheat the oven to 200°C (fan 180°C, gas mark 7) and line a baking tray with baking parchment.

Step 2
Set a little of the egg/milk mix aside to brush on the tops of the scones before they go in the oven.
Throw all the ingredients in the mixing bowl together.
Step 3
Mix until a smooth dough forms. Add a little more milk, if necessary, if the dough seems dry.

Step 4
Press or roll the dough out on a lightly floured surface to a thickness of about 3-4 cm, then using a 5 cm round cutter cut 8 scones or a larger cutter to make 6.

Step 5
Place these on the baking tray, leaving about 5 cm space in between.
Brush the tops with a little milk then bake in the oven for 12-15 minutes until they are golden brown and risen.

Step 6
Cool on a wire rack, then to serve split, buttered and topped with jam and cream.

This is today’s bake – just out of the oven.
I’m very slow, it took me 2 hours but it is worth the effort.
They will be delicious and the sense of achievement is priceless.

@Bobbi , just like how mum cooks them. She even use whipped cream with caramel sauce mixed in.

An absolutely amazing bake, in a world today of pastries and varied bakery delights in my humble opinion a fruit scone is still right up there with the best. Simple pleasures well done @Bobbi.

Excellent baking there Bobbi but just a correction on your pronunciation, it’s scones not scones.

I do enjoy a scone or 2 with some jam & cream. Yours look delicious.
