Collection of Recipes

This is inspired by an original idea by @Bobbi.

I have created this post for adding recipes for dishes I cook.
They should be easy to cook and often “one pot” to minimise washing up etc. though I am a bit messy in the kitchen.

I don’t follow hard and fast measures in recipes and often throw things together. I find in the main, the meals I create are quite nice.

The starter here is a variant on one I posted recently but this is quicker as there is less pre-cooking or reheating.

It is a Spanish Omelette

Patatas Veganta

Ingredients

Jersey Royal or New Potatoes
Red onion, though white is fine
Green Pepper
Garlic
Chilli
Salt, Cheyenne pepper, red chilli powder
Gram (Besan, Chick pea) flour
Water

Method

Veg

I steam potatoes overnight to produce resistance starch, but you can prepare in the day if you prefer
Slice veg into small chunks or slices
Sauté onion and garlic and add pre-steamed potatoes or add potatoes and cook
Add green pepper and cook for a few minutes.
Potatoes should be cooked - use toothpick or your preferred method to check.

Binder

Add 1 cup of Gram flour (Besan/Chick pea) to mixing bowl
Add salt and pepper to taste
Add 1 cup water and mix to create a smooth mix/whisk so no lumps left - should resemble whisked eggs.

Note measures:
Flour 120g
Water 240 ml

Bring together

Add cooked veg to binder and mix/fold until evenly mixed.

Cook in Frying Pan

Preheat olive oil in frying pan on low/medium heat
Add omelette mix, level put and fold in edges
Cover with lid and cook for 8 - 10 minutes
Flip over - check base is golden brown and cook top side. 8 - 10 minutes.

Check and adjust to personal preferences.

Great idea!
Ken did all the cooking but when he eventually gets home (still no carers on the horizon :face_with_diagonal_mouth:) it’s going to be down to me. A daunting prospect so any inspiration I can get would be most welcome.
Poor soul can’t live on beans on toast for the rest of his days :zany_face:

It’ll be alright. You can get quite creative with beans and toast :slight_smile:
Seriously though, there are quite a few “one pot” dishes you can rustle up.
Ken will be fine - it’s give him something to do.

Maybe you can post his favourite recipes on here :slight_smile:

Today - just made a avocado salad with quinoa (sorry - I love quinoa) and home made dressing.
It was delicious.

Gonna finish off with some blue cheese (German) and crackers :slight_smile:

Oh, no, blue cheese :scream: my hubby loves it but I am definitely a cheddar cheese kinda girl :face_savoring_food: hope you enjoyed it.

J often do one pot dishes. Use the slow cooker a lot. I’ll sometimes spend a day when I am off work preparing chillis stews etc to freeze to save time & effort another day.

I did the cooking for Hilary and myself for twenty years before the stroke. I loved messing around in the kitchen trying new ingredients and methods. I brewed my own ale and did some cheese making.

Stroke put paid to it all, I just couldn’t physically manage any of it.

It seemed a shame to let it all go and over time I have been getting back into the kitchen, which gives me a workout and Hilary a break.

I’m painfully slow at all I do and have to start early morning to have an evening meal ready in time. My tardiness drives Hilary crazy and she has learned to leave me in the kitchen to get on with it in my own way. Nevertheless the change is good for us both.

So what I am suggesting is that if you have a partner who wants some kitchen time then encourage them. The results are good all round.

Also a bulk dish that will do for a few days means that all that time is spent to good effect.

Bread, cake, are satisfying projects as are soups and stews.

My very first post stroke project in the kitchen when I could just about walk there was a batch of scones, mixed by hand which prompted the purchase of the stand mixer.

Another good starter project is helping with some of the washing up. Of course it will take time and small amounts just occasionally is a realistic way to approach this.

Very, very, slowly my mobility, hand skills and strength have improved a little, but there’s a long way to go yet.
