In the kitchen again.
We had eaten the scones and there was nothing in for a pudding,
so I made this quick and easy, naughty, sweet treat.
I’ve no photos, they were gone so quick there wasn’t time.
Recommended. Easy
serves two
Ingredients
4 tbsp self-raising flour
4 tbsp sugar
2 tbsp cocoa powder
1 medium egg
3 tbsp milk
3 tbsp vegetable oil or sunflower oil
a few drops of vanilla essence or other essence (orange or peppermint work well)
2 tbsp chocolate chips, nuts, or raisins etc (optional)
Serve with ice cream or caramel sauce
Method
STEP 1
Lightly grease 2 mugs.
STEP 2
To a small bowl, add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder, and mix.
STEP 3
Add 1 medium egg and mix in as much as you can, but don’t worry if there’s still dry mix left.
STEP 4
Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth.
If you are using them, stir in 2 tbsp chocolate chips, nuts, or raisins and mix again.
STEP 5
Divide the mix equally between the two greased mugs.
STEP 6
Centre a mug in the middle of the microwave oven and cook on High for 1½ mins, or until it has stopped rising and is firm to the touch.
Repeat with the second mug.
STEP 7
Serve with a blob of ice cream.
Give one to a partner or friend and have the other yourself. [or eat two, really]
